Originating in Asia, the most common staple crop. Excellent for risotto dishes, this large-grained short rice readily absorbs liquids and flavours. Rinse in cold water. Use 1 cup rice: 2 cups water. (Stock if prefered) Bring to the boil, then simmer slowly in a covered pan for 40 minutes. Serve.*
