Apple Rings are peeled, cored and dried, and are normally of the Granny Smith variety of apple. Not treated with SO2 - which leads to the browner colour. Reconstitute in water or fruit juice, preferably overnight. Delicious as an ingredient, e.g. muesli/ cake or as a snack in its own right.*
